Recipe - Chimichurri Sauce


Most of you know that I've been on and off of the Weight Watchers program for quite some time.  As a Lifetime member I have developed some pretty healthy eating habits over the years.  But my body chemistry has changed with my advancing years and the rules I followed in the past don't work for me now.  I packed on quite a few pounds in late 2013, so 2014 is all about me losing that weight.

Weight Watchers has an answer for my situation:  their new Simple Start program.  It's a food list, yes, but for me it's a push to return to the good eating habits I thought I was following, but I wasn't really.

So far Beaver and I have really been enjoying our wholesome, hand made dishes morning, noon and night.  I bought the new Weight Watchers cookbook, Under 20, and found about 70 recipes that work with Simple Start.  This chimichurri sauce recipe, served with cumin rubbed grilled pork loin, is simply delicious, and only 1 point per serving.

Smooth and tangy chimichurri sauce gives an Argentine flavor to grilled meat.

Chimichurri Sauce

Ingredients

1 clove garlic, peeled
1 cup lightly packed fresh parsley leaves and tender stems
1 cup lightly packed fresh cilantro leaves and tender stems
2 scallions, coarsely chopped
3 tablespoons water
1 tablespoon olive oil
1 teaspoon red-wine vinegar
1/4 teaspoon salt
1/8 teaspoon black pepper

Procedure

Pulse garlic in food processor until finely chopped.  Add parsley, cilantro, scallions, water, oil, vinegar, salt and pepper.  Pulse until finely chopped.

Serve on the side with sliced lean meat.

Makes 4 servings.
